Ingredients for Ground Turkey Meat Loaf


Meatloaf

1 egg, lightly beaten

1 tablespoon whole milk (use bone broth for the Paleo option)

1 tablespoon minced flat-leaf parsley

1-1/2 tablespoons good quality ketchup (use Paleo-compliant ketchup made with pure maple syrup for the Paleo option)

2 teaspoons extra virgin olive oil

1/3 cup breadcrumbs (use nut meal for the Paleo option)

1/2 pound ground beef

1/2 pound ground dark turkey meat

1-1/2 teaspoons Worcestershire sauce

1 teaspoon coarse sea salt

1 teaspoon freshly ground black pepper

Use olive oil for the basket and tack of air fryer

1 medium carrot, shredded (approximately 1/2 cup

Glaze

1/4 cup ketchup (use Paleo-compliant ketchup made with pure maple syrup for the Paleo option)

1 small celery stick, finely chopped

2 scallions, white and green parts, minced or thinly sliced

1 small garlic clove, minced

3 tablespoons Dijon or yellow mustard

4 teaspoons pure maple syrup

 

Directions Ground Turkey Meat Loaf


In a large mixing dish, whisk together the beaten egg, milk, and olive oil. Properly bread with breadcrumbs.

Add the ground beef, ground turkey, shredded carrot, chopped celery, minced scallions, minced garlic, parsley, ketchup, Worcestershire sauce, salt, and pepper to the mixing dish. Mix all the ingredients together using your hands until thoroughly blended.

Preheat the air fryer to 370°F, without the basket and rack of the air fryer.

Rub olive oil over the rack or basket to prevent sticking. Shape the meat mixture into a loaf or log that will fit into your air fryer. Place the meatloaf onto the rack or in the basket for cooking.

Cook the meatloaf in the air fryer at 370°F for 25 minutes. Use a digital meat thermometer to check the internal temperature, aiming for 155°F at the center. Adjust the cooking time if needed.

While the meatloaf is cooking, prepare the glaze. In a small saucepan over medium heat, whisk together the ketchup, mustard, and maple syrup until the mixture begins to boil. Reduce the heat to low and keep the glaze warm until ready to use. Add a little water if the glaze becomes too thick.

Once the meatloaf reaches 155°F, brush the top and sides with a generous amount of glaze. Reserve any remaining glaze for meatloaf sandwiches, if desired.

Reset the air fryer to 370°F and cook the meatloaf for an additional 5 to 10 minutes, or until it reaches an internal temperature of 165°F.

Gently transfer the cooked meatloaf to a cutting board and drape it loosely with foil, allowing it to rest for a delightful 10 minutes before slicing. Cut the meatloaf into thin slices, approximately 3/4-inch thick.
