With just 15 minutes of preparation and a quick 10 minutes of cook time, you can have these mouthwatering Air Fryer Turkey Enchiladas ready to enjoy in a total of 25 minutes.

 

Ingredients:

 

•             1 pound ground turkey

•             1 green bell pepper, diced

•             1/2 cup diced yellow onion

•             1-2 teaspoons minced garlic

•             1 teaspoon taco seasoning

•             3 tablespoons tomato paste

•             2 to 3 tablespoons vegetable oil

•             1/2 teaspoon sugar

•             1/8 cup diced cilantro

•             1/4 cup diced scallions

•             Salt and pepper to taste

•             1 cup shredded cheddar cheese

•             Corn or flour tortillas

 

Serving Suggestions:

 

•             Diced cilantro

•             Scallions

•             Salsa

•             Sour cream

 

Method:

 

In a large frying pan, cook ground turkey, green bell pepper, diced onion, and minced garlic over medium-high heat until the turkey is browned and the vegetables are softened.

Remove the turkey and veggies from the heat and transfer them to a medium-sized mixing bowl. Add taco seasoning, water, sliced onions, diced cilantro, and shredded cheese to the mixture. Season with salt and pepper to taste. Mix well.

To prepare the homemade red chilli sauce, heat vegetable oil in a small pan. Enhance the depth of flavours by incorporating tomato paste, a perfect blend of taco seasoning, and a hint of minced garlic into the mix. Cook for 1 minute over low-medium heat. Then, add water and granulated sugar. Bring to a low boil and cook for 2-3 minutes until the sauce thickens. Carefully transfer the luscious sauce to a dainty little bowl, ready to elevate the flavours of your Air Fryer Turkey Enchiladas.

Spoon about 1/2 cup of the turkey filling into the center of each tortilla and fold them up. Place the enchiladas seam-side down on your air fryer basket, baking pan, or a sheet of foil.

Pour the remaining sauce over the enchiladas. If you have an air fryer oven, set the temperature to 350 degrees F on the air fryer setting and cook for 5-7 minutes. If you have an air fryer basket, place the baking pan in the basket or on the lowest tray level and cook for 5-7 minutes.

After 5-7 minutes, return the enchiladas to the air fryer for another 2-3 minutes, or until the cheese has melted.

INGREDIENTS

    1/2 cup sauteed poblano peppers

    2 cups black beans (warmed up)

    1 teaspoon taco seasoning

    2 Flour Tortillas

    1 cup shredded Mexican Cheese

           Guacamole: Add a creamy and flavorful touch with a dollop of homemade or store-bought guacamole. The creamy avocado goodness pairs perfectly with the cheesy and savoury quesadillas.

           Sour Cream: Indulge in the tangy and cooling sensation of sour cream. A spoonful of sour cream adds richness and a delightful contrast to the flavours of the quesadillas.

Direction

Begin with the filling. Simple black beans (warmed and combined with taco seasoning) and sautéed poblanos were used today.

Place the tortilla on a flat surface, then put 1/2 cup of the black bean mixture on top, sprinkle with sautéed poblano peppers, and top with cheese.

Place the tortilla on the air fryer tray or basket and cook for 5 minutes at 350°F on the air fryer setting, then flip and cook for another 3–5 minutes.

Plate, serve, and have a good time!

NOTES

After flipping the tortilla, I sprayed both sides with cooking spray (olive oil spray) to get the tortilla shell extra crunchy.
