1-2 teaspoons olive oil

1 pound lean ground beef

15 ounces drained black beans

1/2 teaspoon Chorizo Chili Spice Blend

1 teaspoon salt

1/2 teaspoon black pepper

1 head of Romaine lettuce

1 tomato, sliced

1 scallion, sliced

1/2 cup drained canned corn

8 Flour or Corn Tortillas


Dressing Ingredients

1 cup fresh cilantro

1/1 teaspoon minced garlic

1/8 cup lime juice

1 teaspoon honey

1/2 teaspoon ground coriander

1/4 teaspoon salt

1/4 cup olive oil


Instructions

Start by heating up a pan and adding olive oil. Once the pan is hot, add the lean ground beef and cook it until it's fully cooked through. Ensure that you divide it into smaller chunks while it is cooking. This process should take about 8-10 minutes.

While the ground beef is cooking, you can prepare the tortilla strips. Take a tortilla and slice it into long strips using kitchen shears. Once sliced, set them aside until later.
